I think sorbets is just like frozen fruit juice and sherbet is made with cream but don't hold me to that.
A quick perusal of web recipes shows there is much confusion on this issue. Sherbet more often contains milk. Sorbets are supposed to be just fruit and maybe a bit of lemon juice and egg white. So, IMHO, a true sherbet must have milk/cream in the recipe.
thats kind of what i had originally been thinking, but as you found, online recipes look like they randomly assigned a 'sorbet' or 'sherbet' to the title.
