moms zucchini bread

when there is jack-all to do online,
and jack-all to talk about with the few souls online,
and jack-all the husband wants to do,

we bake!

moms zucchini bread

2c grated and drained zucchini you got from a volunteer at work
3 fresh-as-they-come eggs, lightly beaten
1c salad oil (wtf? salad oil? ive got canola...)
1c sugar
2tsp vanilla - who am i kidding, the more the merrier

mix these ingreedients in a bowl till nicely goopy.

3.25c flour
1tsp baking powder
1tsp baking soda that doesnt smell like the freezer
3tsp cinnamon

sift together in a different bowl. if youre going to use your hand, make sure its not all goopy from the zucchini mixture.

combine the goopy and the sifted bowls. add raisins or nuts if you want to ruin it.

pour equal amounts into two greased and floured bread pans. bake at 350°F until the husband asks, 'what is that gawd-awful smell?' (or for 60 minutes).

cool on racks for ten minutes.

eat and think of sunny days in your mothers greenhouse.

4 Love Notes

You're making me hungry.

I never bake, I hate cooking in general.

If one can buy it ready made at the store I don't see the point :)

Of course if you'd like to send me a piece of that home made bread I wouldn't turn my nose up.

i would share some if either one of you were here.

I have actually always preferred baking to cooking. I don't know why. I guess I like the idea of having a "treat" at the end of my efforts.
