Spring Orzo Salad

Since it was a big hit with the staff, I wanted to spread the wealth.

Spring Orzo Salad: Makes 2 servings

2/3 c orzo pasta, cooked per package directions
1/3 c finely chopped red bell pepper
1/3 c finely chopped orange bell pepper
1/3 c finely chopped and seeded tomatoes
1/4 c chopped sun-dried tomatoes
1/4 c chopped scallions
1/4 c chopped watercress
1/3 c crumbled reduced-fat feta cheese
1 tsp minced garlic
2 tsp lemon juice
2 tsp olive oil
salt and pepper to taste

Per serving: 343 calories, 14g protein, 53g carbohydrates, 9g fat, 7mg cholesterol, 4g fiber
