Palmiers

Palmiers are super yummy and super easy to make. Please don't buy them at the store, it makes Betty Crocker cry. Here's how you do it.

Buy a box of puff pastry. It's in the frozen section, by the pies. The snootier the name on the box, the better the dough. But you live in Alaska, and should be grateful that you get what you get.

Pull one sheet of pastry out of the box and thaw on the counter for 20 minutes. Put the other sheet back in the freezer.

Palmiers #1: puff pastry covered in sugar

Sprinkle 1/2 cup of sugar on the counter and unfold the puff pastry onto it. Sprinkle another 1/2 cup of sugar on top of the pastry. With a rolling pin, roll it out until 1/8" thick, adding more sugar when necessary.

Palmiers #2: with cinnamon

Declare that you are Living On The Edge, and sprinkle half of the pastry with cinnamon. Roll each side into the center, then wrap in plastic and refrigerate for a bit.

Palmiers #3: roll it up

Heat oven to 350°F. Once heated, pull the pastry from the refrigerator and slice into 1/8" rounds. Place on a parchment-paper-covered cookie sheet, and bake for 20-25 minutes, or until golden brown.

Palmiers #4: slice it

Eat one warm, before it gets too crispy.
